When deep fried, the crispy roll is known as a spring roll, but if left raw it is known as popiah. For the popiah, the various ingredients are usually placed in small saucers for diners to mix and add according to their taste preferences. Usually Popiah is eaten as a snack or as an accompaniment to the main meal. Today, I spent my time with my family by making Popiah together. We enjoyed it with hot coffee during tea time.

Ingredients

20 pieces popiah skin

1 carrot

2 medium size yam bean (peeled)

100g cabbage

100g long beans, chopped

100g bean sprouts

50g onions & 1 tsp chopped finely

2 tbsp oil

1 tbsp salt

4 tbsp light soya sauce

1 tsp ground black pepper

peanut butter (optional)

Methods:

1. Nearly 3 weeks I didn't update my food blog as heavy tasks wait for me to be done everyday. I'm almost exhausted after everyday works. So, I decided to cook myself a pot of "chicken soup for my soul". :p Today, I'm too tired to prepare the traditional chicken soup with herbs. Far more than a seasoning, ginger is a nutritional supplement that is both new and old!

Ginger offers a multitude of other health benefits. It improves digestion, prevents and manages stomach ulcers, protects against symptoms of colds and flu, stimulates blood circulation, acts as an anti-inflammatory. Ginger can prevent colds and, if they already exist, it can reduce their symptoms and to speed recovery.

Ingredients:

1 2-inch piece old ginger

1/2 chicken

1 tsp salt

3 tbsp rice wine (optional)

Methods:

1. Wash and clean the chicken, cut into smaller pieces
2. Wash and cut the ginger into thin slices
3. Boil a pot of water (about 2L), add in chicken, gingers and salt once the water boiled.
4. Boil it under lower heat for 30 minutes.
5. Add the rice wine and it's ready to serve.

Steamed Lasagna Spring Roll

This is the first time I make my own spring roll (or should I call them dumpling?) Unfortunately Italian food is not cheap at my place. Recently I learn to make my own fresh pasta from flour and eggs in easy and inexpensive way, and the results are delicious. Thought I am tired after kneading the dough, I'm glad that finally I can have my own fresh pasta. :)

My 1st home made fresh pasta, too thick though :p

Ingredients:

500g of Flour

4 Eggs

Methods:

1. Add the flour in a big bowl, form a well.

2. Using your fingertips or a spoon, mix the flour into the egg, continue whisking, gradually drawing in the flour as you go until the dough becomes thick.

4. Turn the dough ball out onto a well-floured cutting board. Flour your hands as well. Knead the dough for about 10 minutes, or until it becomes smooth. (To knead, push the dough away from you with the heel of your hand. Then fold it over on itself, turn it and repeat. You may have to add flour periodically through the kneading process).

5. To check if the dough is ready, press it with the tip of your finger. If it springs back, it means it has reached the desired texture. Let the dough rest in a bowl, Cover the bowl with a damp, but not wet, cloth to prevent drying for about 10 minutes.

6. Lightly flour a clean work surface and knead the dough for around ten minutes.

7. Divide the dough into several balls, roll out the first ball of dough using a rolling pin or a cleaned empty wine bottle until it is very thin, lightly flouring if necessary to avoid sticking.

8. Cut them into the shapes you like. As this is my 1st try, I cut them into simple shapes such as lasagna, thin strips of flat pasta.

9. Once dried, bring a large saucepan of salted water to the boil, add the pasta and cook for 2-3 minutes only. Serve immediately, either simply with a little olive oil and herbs, or with a suitable sauce. For lasagna, you just need an oven to get your delicious lasagna done.

It's very easy to make, and you can freeze them to save for later.

Home Made Rice Noodles

Today is my school holiday, I'm quite free, so I decided to make my own rice noodles. Mix the rice powder and corn flour in a big bowl or your big cooking pan, form a well.

2. Using a spoon, mix the mixture with the hot water, continue whisking, gradually drawing in the mixture as you add in the hot water little by little.

3. After you got a dough, mold the dough into round shapes as big as hand palm. (or you may mold it with your mold maker, but make sure you oil mold with vegetable oil to avoid sticky).

4. Steam them with high heat for 30 minutes.

5. You can take 4 pieces (for 2-3 pax) of the round rice noodles and cut them into cubes or slices for stir fry later. You may freeze them to save for later as well.

Tofu with Mushroom

Tofu is made from soybeans, water and a coagulant, or curdling agent. Tofu originated in ancient China. Tofu, a staple of Asian cuisines for hundreds of years, has recently become popular in Western vegetarian cooking. Tofu is low in calories, contains a relatively large amount of iron and contains little fat.

I bought a slice of tofu from the wet market yesterday. The tofu here makes me miss the tofu at my home town, which is fresher, bigger and cheaper.

Since tofu has very little flavor or smell on its own, I add in mushrooms to make my dish taste better.

Ingredients:

1 slice tofu (about 250g)

150g fresh mushrooms (sliced)

1 bunch Spring Onion (finely chopped)

3 tbsp terriyaki sauce

1 tbsp olive oil

Methods:

1. Wash and cut the tofu into small cubes.

2. Cut the mushrooms into slices.

3. Fried the finely chopped spring onion with the olive oil.

4. Add in the tofu and mushrooms, stir fry for 2 minutes.

5. Add some water (optional)

6. Add the terriyaki sauce then stir fry for another 3 minutes. Ready to serve 2 person.

Cook Turkey in Crock Pot

How to Cook a Turkey Breast in the Crock Pot

from wikiHow - The How to Manual That You Can Edit

If you have a small family for Thanksgiving Day or just love turkey, this recipe is very easy and makes the moistest turkey ever. Season with the salt, pepper, and garlic powder. Top with 2 cloves of raw garlic. Mince the garlic if you'd like to spread it out.

Coat the bottom of crock pot with butter spray sides generously with nonstick cooking spray.

Place the onion slices in the crock pot.

Place the turkey breast on top of the onion.

Add the two cans of broth to bottom of crock without washing the seasoning off the turkey breast.

Cover and cook on low for eight to ten hours.

Tips

If you have leftovers, leave them in the crock pot. Add your choice vegetables, beans, potatoes, mushrooms, broth to cover, and any seasoning you want. Cook until the potatoes and vegetables are tender, and enjoy some turkey soup.

Leave the cover on the whole time it's cooking. I decided to steam them with eggs rather than grill as there're very fresh (I bought them directly from a fisherman).

Ingredients:

200g Fresh Tiger Shrimps

1/2 big Onion (chopped)

2 beaten eggs

1 tbsp Olive Oil

3 tbsp light soy sauce

Methods:

1. Wash the tiger shrimps.

2. Arrange tiger shrimps nicely in a plate with 1 tbsp Olive Oil on it.

3. Add the light soy sauce and chopped big onion into the beaten eggs and mix well.

4. Pour the ingredients No.3 onto the tiger shrimps.

5. Steam on high heat for 10 minutes and it's ready to serve. (You may add some chili powder or pepper)

This is really cheap but delicious, cost around USD5 ONLY.

I will try out for the other way of cooking tiger shrimps on this coming weekend :)

Heavenly Rice Noodle ~ 炒白粿干

During my childhood, my mom used to cook this dish especially on special celebration day. While waiting for the pot of 2L water to boil, pour out the fried onion into a large bowl and add in the light soy sauce.

3. Add the egg noodles into the pot once the water is boiled.

4. Let the noodles boiled under high heat and remove the noodles from the pot once it's boiled. (around 1 minute, to avoid the noodle become sticky)

5. Drain the noodles well, then add them to the large bowl ready at step 2.

6. Cut the pork into slices & season with 2 tbsp of Teriyaki souce and some black pepper for 15 minutes.

2. In Peninsular Malaysia and Singapore, the season for durians is typically from June to August, which coincides with that of the mangosteen.

Last week I bought a durian from market. It is so big. This durian consider a good durian as it has a substantial amount of flesh, between the skin and the seed. The taste is quite bitter but nice. The seed is so small which cover with thick, creamy yellow flesh, like ice cream or chocolate.

Together with my 2 friends, we finished it in just a couple of minutes.

Oh... Strong wind blowing all the while. I try to have something hot and special :p So, I try this out:

Ingredients:

1/2 cup pineapple juice
2 cloves garlic (mince)
1 medium onion (chop)
2 tsp soy sauce

1 tsp. ground black pepper

2 tbsp extra virgin olive oil
2 to 4 lamb chops

Methods:

1. In a resealable bag, mix together the pineapple juice, soy sauce, garlic and onion. Place the lamb chop into the mixture; cover and refrigerate for 3 hours.

2. Heat a large pan with one to two tablespoons of high quality extra virgin olive oil. The amount of oil will be just enough to evenly coat the pan when the oil is hot. Once the oil is up to temperature, place the lamb chops and marinade into the pan, and stir.

3. Turn heat down to medium-low, and cover. Cook for 20 minutes, then remove lid, and continue cooking until liquid has evaporated. If your lamb chops are thicker, allow the chops to stay over medium to medium-low heat until they reach for few more minutes. (Check the temperature every minute to two minutes.)

4. Serve with sauce spooned on top of the lamb chop.

Simply Sweet Broccoli Soup

I feel very lazy to cook today as I'm not feeling well. I always learnt from my failure, so I hope with my simple tips could help you to turn your failure into success.

~Always use fresh eggs. Eggs separate best when cold.
~Prepare all the necessary ingredients.
~Cream butter and sugar until light and fluffy.
~Always shift flour, baking soda, baking powder and spices to avoid lump.
~For a lighter cake, separate the eggs. Add the yolks to the butter mixture, whip the egg white and fold them into the final batter.
~Cake should be cooled completely on wire racks so that it can be remove easily.
~Cut the cake with a sharp, thin knife.

Happy Baking :)

Basic Sponge Cake ~基本海绵蛋糕

Ingredients:
5 eggs
90g sugar
100g flour
1 tbsp corn oil

Method:
1. Usually people eat raw or lightly cooked as in microwave and stir-fry. For me, eating the broccoli raw might not be a good choice if pesticide has been applied on it. Besides, people are kind a busy to prepare in stir-fry. So, I got an idea to cook it in the most simple and healthy way.
If you wish to have some fresh broccoli in 5 minutes, here you may try my simple and healthy cooking method.

Ingredients:

100g of broccoli

2 teaspoons of mayonnaise / creamy pasta source

Methods:
1) Wash broccoli. Peel away the outer layer of the stems because these are woody.
2) Bring to boil a pot of water and add a teaspoon of salt and a teaspoon of cooking oil.
3) Blanch broccoli in boiling water to desired softness. Preventing broccoli's unpleasant odor is easy -- don't use an aluminum pan and don't overcook it; five minutes is plenty. Make one or two cuts through the stems before cooking. This helps the stems cook as fast as the tops.
4) Allow broccoli to drain thoroughly to remove excess water.
5) Place broccoli on serving plate / bowl. Ready to serve with dressing mixed / separately.

A warm reminder: Broccoli is one of the leading intestinal gas producers. To reduce its gas production, you may eat broccoli with ginger or garlic.
